That is because the land is surrounded by the sea and mountains and is blessed with warm climate. As you can see with the variety of dim sum available, there are so many types of dishes using fresh seafood and vegetables from the sea and the mountains.
Moreover, Cantonese cuisine boasts a wide variety of cooking methods. Take for example, stir fry, which includes "Baku", "stir fry", "grill", and "soot", so you can enjoy dishes cooked in various ways.
Beijing, Shanghai, Szechwan, and Cantonese are widely regarded as the four major Chinese cuisines and each have their own unique characteristics.
Beijing cuisine is energetic due largely to its cold weather, Shanghai cuisine utilizes fresh seafoods, and Szechwan, has developed seasonings due to its distance from sea.
Cantonese cuisine boasts a wide variety of dishes, largely due to the land with access to the rich sea and the mountains.
Yet Cantonese cuisine retains a spirit of creativity. For instance XO sauce is a relatively new seasoning.
